Late summer nights, call for simple grilling recipes that take no time but taste amazing. A shrimp boil on the grill is the perfect dinner calling anyone’s name. This really is the easiest way to make a shrimp boil at home with essentially zero clean up!
Ingredients
1 1/2 pounds baby shrimp
1 (12.8-ounce) package andouille chicken sausage, thinly sliced
2 ears corn, each cut crosswise into 4 pieces or 2 cups of frozen corn kernels
1 pound baby red potatoes or sweet potato, diced
1 cup spinach
2 tablespoons butter
4 teaspoons cajun seasoning
Salt and pepper, to taste
3 tablespoons chopped fresh parsley leaves
Preheat a gas or charcoal grill over high heat to 400 degrees
Cut 4 sheets of foil about 12 inches long.
Combine all ingredients together in a bowl.
Divide the mixture evenly into all foil sheets.
Fold the sides of the foil over the shrimp and completely seal the edges of the foil so the packet is completely closed.
Place the foil packets on the grill and cook for about 10-12 minutes or until cooked through.
Serve immediately.
