Fall time means all things pumpkin, especially when the weather gets cooler we all love to have a warm pumpkin spice latte in our hands. The PSL at the popular coffee shop is full of sugar and is overly sweetened. This recipe calls for only 5 ingredients, easy to make, low in sugar per serving, and is absolutely decadent.
It does make a lot in quantity but there are so many other uses than adding it to your latte. Here are some suggestions:
- add into pancake batter
- oatmeal
- smoothies
- overnight oats
- chia pudding
- onto waffles
- french toast
- into a fall cocktail!
Ingredients
1 (15 oz) can pumpkin puree
1 cup brown sugar or coconut sugar
2 teaspoons vanilla extract
2 tablespoons pumpkin pie spice mix
1/4 cup water (may need up to 1/2 cup)
Mix all ingredients into a pot and simmer on the stove on medium-low. Add 1/4 cup of water, to begin with. To make the syrup thinner, continue to add more water. Continue to stir to dissolve the sugar which may take 5-6 minutes. After the consistency becomes syrup-like, let cool. Pour into a jar and store in the refrigerator. This will keep in the fridge for about a month. Stir the syrup in the jar before adding to your coffee or latte.
Add 1 tablespoon to your coffee or latte.
