Asian Chicken Salad

This delicious and healthy salad comes together so fast.  It tastes delicious and is filling to have for dinner.  This dinner can be made in about 30 minutes from the time you begin cutting the veggies, cooking the chicken, and plating the food.  I have made this salad many, many times and it is family approved for a busy night!

This salad could easily be made for a family or increased proportions for a large crowd.  It will always taste great and be a crowd-pleaser.

So let’s get to the recipe!

Ingredients

serves 4-6 people

 

Salad

  • 1 pound of boneless skinless chicken thighs
  • 1 cup Primal Kitchen Sesame Ginger dressing
  • 2-3 cups of Romaine and spinach mix
  • 1 cup shredded carrots
  • 2 green onion, sliced
  • 1 cup sliced cabbage
  • 1 cup bean sprouts
  • 1 cup diced cucumber
  • 1/4 cup chow mein noodles
  • 1/3 nuts (peanuts or cashews)
  • salt and pepper to taste

Peanut Dressing

  • 1/4 cup all-natural peanut butter or almond butter
  • 1 1/2 tablespoons maple syrup
  • 2 tablespoons Tamari
  • 1 clove of garlic
  • 1-2 tablespoons water

 

To make the chicken, marinade it in the Primal Kitchen Sesame Ginger dressing overnight.  Warm cast iron skillet on the stove to medium heat.  Add chicken and cook 4-5 minutes per side or to 165 degrees. Season chicken with salt and pepper.

While chicken is cooking, chop vegetables and toss together.

For the peanut butter dressing add all ingredients into a blender.  Blend until well combined.

Add chicken and dressing to the salad.

Serve immediately!
